A handful of winegrowers is committed to organic farming since 2009. These small cuvées are issued from grapes harvested at their optimum phenolic ripeness to reveal the best of their terroir.
Grapes
Syrah 41%, Grenache 18%, Cinsault 18%, Carignan 13%, Mourvèdre 10%..
Winemaking
Alcoholic fermentation between 25 et 28°C. Soft extraction without press-juice.
Food pairings
Beef carpaccio with cepes. Ragout of duck with peaches.
Tasting
Dark ruby color. After breathing, it reveals a sumptuous nose of red cherries and plum fruits. The mouth is structured and dense with delicate notes of black berries and violets. It has a persistent finish on mellow tannins.
